Cucumber Cream Cheese Sandwich
Cool cucumber slices and tangy cream cheese-goat cheese spread make tidy little sandwiches for an easy, no-cook bite.

Ingredients
- 8 bread slices
- 1/4 cup cream cheese
- 1/4 cup goat cheese
- 1 teaspoon dill
- Salt and pepper
- 1 cup thinly sliced cucumber
Directions
- Stir the cream cheese, goat cheese, salt, pepper, and dill, if using, together in a bowl until combined. Spread the mixture over 1 side of each bread slice.
- Arrange the cucumber slices in a single layer on 4 of the bread slices, keeping the cheese-coated sides facing up. Set the remaining slices over the cucumbers, cheese side down, so the spread touches the cucumber layer and forms the sandwiches.
- Press each sandwich lightly so the layers hold together. Trim off the crusts if you like, then cut each sandwich into 4 squares.
- Pack the sandwiches in sandwich bags or tuck them into your kids' lunchbox for later.
