Ingredients

15 oz can pumpkin puree

3 large eggs

1/2 cup vegetable oil

1/2 cup milk

1/2 cup molasses

1 1/2 cups sugar

1 Tbsp pumpkin pie spice

3 cups all-purpose flour

2 tsp baking powder

1 1/2 tsp salt

Directions

Preheat the oven to 375 degrees. In a large bowl whisk together the pumpkin, eggs, oil, milk, molasses, sugar, and pumpkin pie spice until very smooth. In a separate bowl, combine the flour, salt, and baking powder. Stir very well. Pour the flour mixture into the bowl with the wet ingredients and stir just until evenly combined . Pour the batter into a loaf pan coated with non-stick spray and bake for one hour or until a toothpick inserted into the middle comes out clean. Allow the bread to cool completely before slicing.
