Easy Low-Carb Grilled Greek Zucchini

Ingredients
4 small or 3 medium sized zucchinis
2 T olive oil to brush zucchini
2 T Greek Seasoning
3/4 cup crumbled Feta Cheese
Directions
Wash zucchini, trim ends, and cut each small zucchini into four lengthwise pieces and each larger zucchini into six lengthwise pieces. If you have larger zucchinis with quite a few seeds, you can trim those seeds off along the edge. Brush both sides of zucchini with olive oil and sprinkle generously with Greek Seasoning. Preheat the Stovetop Grill Pan over medium high heat so it’s hot when you put the zucchini on and you can get nice grill marks. Lay zucchini crosswise to the grill grates with flat side down and cook about 3 minutes. Turn zucchini so the other flat side is down and cook about 3 minutes more. Then turn zucchini so the green skin side is down and cook 3-4 minutes more, or until it’s done to the desired tenderness when you pierce it with a fork. Arrange grilled zucchini on a serving platter and sprinkle with Feta Cheese, and enjoy!.
