Ingredients

3/4 cup almond flour

1/2 cup hemp seeds

3/4 cup coarsely grated Parmesan cheese

1/4 cup flaxseed meal

1/2 tsp. baking powder

1 tsp. Spike Seasoning

1/4 tsp. salt

6 eggs, beaten well

1/2 cup cottage cheese, rinsed and drained

1/3 cup thinly sliced green onion

Directions

Put cottage cheese into a fine-mesh strainer placed in the sink, rinse cottage cheese well with cold water, then let it drain. Preheat oven to 325F/165C and spray loaf pan with non-stick cooking spray. Mix together Almond Flour , Hemp Seeds , Parmesan cheese, Flaxseed Meal , baking powder, Spike Seasoning , and salt. Beat eggs until the yolks and whites are completely combined, then mix in the rinsed cottage cheese. Thinly slice 1/3 cup green onions. Mix eggs and green onions into the dry ingredients, stir to combine ingredients well, and transfer the batter to the loaf pan. Bake about 55 minutes, or until the top of the bread is firm and nicely browned, and a toothpick comes out clean when you test. This bread can be sliced and frozen, and reheats well, although don't heat it too long or it will get hard.
