Instant Pot Low-Carb Ham and Cabbage Soup

How to make?
1 head cabbage, chopped
1 cup chopped onion
1 red bell pepper, finely chopped
2 small carrots, cut in small rounds or chopped
2 cups diced lean ham
2 bay leaves
1 tsp.Â Spike SeasoningÂ
1 tsp. granulated garlic
1 T dried parsley
1 tsp.Â Beau Monde Seasoning or season salt
coarse ground black pepper to taste
6 cups chicken stock
2 packetsÂ Goya Ham Flavor ConcentrateÂ or other ham flavor base
Chop cabbage, onion, red bell pepper, ham, and carrots . Put cabbage, onion, and red bell pepper in the bottom of the Instant Pot. Add the chopped ham, carrots, and bay leaves, and sprinkle theÂ Spike Seasoning, granulated garlic, dried parsley, Beau Monde Seasoning, and black pepper over the top. Mix theÂ Goya Ham Flavor ConcentrateÂ or other ham flavor base into the chicken stock and pour the liquid over the ingredients in the Instant Pot. Lock the lid, set to MANUAL, HIGH PRESSURE, and cook for 15 minutes. Let pressure release manually for 10-15 minutes, then release manually. Serve hot, with freshly grated Parmesan to add at the table if desired.
