Frittata with Canadian Bacon, Green Onions, and Cheese
This Low-Carb Frittata with Canadian Bacon, Green Onions, and Cheese is an easy and delicious breakfast.

Ingredients
- 2 tsp. olive oil
- 2/3 C diced Canadian bacon
- 1/4 cup sliced green onion + 1 T for garnish
- 1 C grated low-fat cheese
- 8 eggs, beaten
- 1/2 tsp. Spike Seasoning
- salt and fresh ground black pepper to taste
- low-fat sour cream for serving if desired
Directions
- Warm the olive oil in a heavy non-stick 10 inch frying pan or frittata pan. If you’re planning to brown the top at the end, make sure the pan you choose is safe to slide under the broiler.
- Add the diced Canadian bacon and sliced green onions to the pan, and let them cook over medium-low heat for 1-2 minutes so their flavors can wake up a bit.
- While that’s happening, crack the eggs into a small bowl and season them with Spike Seasoning, salt, and pepper.
- Scatter the grated cheese into the pan, then pour the eggs in right away. Give everything a gentle stir with a fork so the ingredients are nicely spread through the eggs.
- If you want to brown the top, go ahead and start preheating the broiler now.
- Cover the pan and cook over medium-low heat for 10-12 minutes, until the eggs are just barely firm and the frittata has puffed slightly.
- For a browned top, move the pan under the preheated broiler and cook for 2-4 minutes, keeping a close eye on it. You may need to turn the pan so the top browns evenly.
- Slice the frittata into 4 wedges, add green onions on top if you’d like, and serve hot. A spoonful of low-fat sour cream on each piece is great if you want it.
