Braised BBQ Beef Sandwich

Chuck roast, slow cooked on low heat in a braise of barbecue sauce, then shredded and served over sandwich buns. Great for big parties.

Braised BBQ Beef Sandwich

Ingredients

  • One 3-pound chuck roast, rinsed and dried
  • 2 medium onions, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 28-ounce can whole tomatoes
  • 1 18-ounce bottle of your favorite barbecue sauce
  • Salt and freshly ground black pepper
  • 12 sandwich or hamburger buns

Directions

  1. Warm the olive oil in a large, heavy pot over medium heat. Add the onions and let them cook until they turn translucent, about 5 minutes. Pour in the tomatoes, breaking them up roughly right in the pot, then stir in the barbecue sauce. Turn the heat up to medium high and let the sauce simmer for 10 minutes.
  2. Add the chuck roast to the pot. Bring everything to a low simmer, cover the pot, and let it cook slowly until the meat is very tender, stirring now and then, about 3 hours.
  3. Take the meat out of the pot. With a fork and knife, pull the roast apart into small pieces, then set it aside.
  4. Raise the heat under the pot to medium/medium-high, leave it uncovered, and cook the liquid down until it thickens. Stir frequently so the sauce doesn’t burn.
  5. Put the meat back into the sauce in the pan. Heat everything through, then season with salt and pepper to taste.
  6. Serve on buns.
