Crab and Scallion Strata
Crab can make an unexpected and elegant addition to your brunch table. This recipe makes the most out of the ingredient by preparing it into a delicate strata.

Ingredients
- 1 tablespoon butter
- 1 garlic clover, finely chopped
- 5 ounces picked over crab meat
- 4 scallions, chopped
- 5 eggs, beaten
- 3/4 cups milk
- 6 cups cubed Italian bread
- Pinch red pepper flakes
- Kosher salt and cracked black pepper
Directions
- Set an oven rack in the middle position and preheat the oven to 375 degrees.
- Melt the butter in a medium skillet over medium heat. Add the garlic once the butter has melted, and cook it until you can really smell it, about 2 minutes. Stir in the crab and scallions, and cook, stirring often, until the crab is fully warm. Season to taste with salt and pepper.
- In a large bowl, whisk the eggs, milk, and pinch of red pepper flakes. Add the bread and toss it with the milk mixture, then let it sit for 5 minutes.
- Spoon everything into a greased square pan and bake until the strata is puffed and golden, about 30 minutes. Serve with scallions and a dollop of sour cream if desired.
