Crab and Scallion Strata

Crab and Scallion Strata

Ingredients

  • 1 tablespoon butter
  • 1 garlic clover, finely chopped
  • 5 ounces picked over crab meat
  • 4 scallions, chopped
  • 5 eggs, beaten
  • 3/4 cups milk
  • 6 cups cubed Italian bread
  • Pinch red pepper flakes
  • Kosher salt and cracked black pepper

Directions

  1. Set an oven rack in the middle position and preheat the oven to 375 degrees.
  2. Melt the butter in a medium skillet over medium heat. Add the garlic once the butter has melted, and cook it until you can really smell it, about 2 minutes. Stir in the crab and scallions, and cook, stirring often, until the crab is fully warm. Season to taste with salt and pepper.
  3. In a large bowl, whisk the eggs, milk, and pinch of red pepper flakes. Add the bread and toss it with the milk mixture, then let it sit for 5 minutes.
  4. Spoon everything into a greased square pan and bake until the strata is puffed and golden, about 30 minutes. Serve with scallions and a dollop of sour cream if desired.
