Ingredients
1 cup ounces tomato juice
2 cups beef broth
1 1/2 cups chopped red or green pepper
3/4 cup chopped onion
1 chopped English cucumber
1/3 cup lemon juice
1 tablespoon olive oil
1 tablespoon paprika
1 clove garlic, minced or pressed
1/2 cup chopped parsley
1 teaspoon salt
1/8 teaspoon pepper
Directions
In large bowl, combine all ingredients. If desired, purée. Cover and chill for at least 30 minutes, preferably a few hours.
