Saint Agur Blue Cheese Sablés
Savory blue cheese sablés bake into tender, buttery slice-and-bake cookies with a salty-sweet bite.

Ingredients
- 18 tablespoons unsalted butter, at room temperature
- 1/2 cup Saint Agur blue cheese, at room temperature
- 1/2 cup sugar
- 1/4 teaspoon salt
- 2 egg yolks, at room temperature
- 2 1/4 cups all-purpose flour
Directions
- Using an electric mixer set to medium-low, mix the butter with the cheese until the two are fully combined, about 1 minute. Beat in the sugar and salt only until the mixture looks creamy and even, about 1 minute more; no need to whip it. Add the egg yolks 1 at a time, mixing after each yolk only until it disappears into the batter. Once the batter holds together, turn off the mixer.
- Fold in the flour with a rubber spatula, stopping as soon as you no longer see dry flour. The dough should look sandy, but it will hold in a ball when you press it. Shape it into a 2-inch thick log, cover it with plastic wrap, and refrigerate for 4 hours.
- Heat the oven to 350F. Cover a baking sheet with parchment paper. Cut the log into 1/2-inch thick cookies, then arrange them 1-inch apart on the baking sheet. Bake for about 18 minutes, until the edges are light brown.
