Savory Elevenses
These two dishes are exceptionally simple and come together quickly.

Ingredients
- Devils on Horseback:
- 12 dates
- 1/3 cup crumbled blue cheese
- 12 almonds, toasted
- 4 slices bacon
- Cucumber Sandwiches:
- 8 slices white bread
- 1/2 cup cream cheese
- 1/2 English cucumber, thinly sliced
- Kosher salt and cracked black pepper
Directions
- Heat your oven to 400 degrees. Tuck 1 almond and a few blue cheese crumbles into each date, then wind 1/3 slice of bacon around it. Set the dates on a baking sheet and roast until the bacon has crisped, about 8 minutes.
- Trim the crusts from every slice of bread, then press each slice flat with a rolling pin. Coat 1 side of each bread slice evenly with cream cheese, lay cucumber slices over 4 pieces of bread, and add salt and pepper. Close the sandwiches with the remaining bread slices.
- Slice the sandwiches into triangles, and bring them to the table beside the devils on horseback and a cup of strong black tea.
