Habanero Hot Sauce
A blazing blended habanero salsa with carrots, tomatoes, garlic, lime, and vinegar for deep flavor underneath all that heat.

Ingredients
- 1 tablespoon olive oil
- 2 large carrots, chopped
- 2 medium-sized red tomatoes, cut into quarters
- Quarter of one Spanish onion, cut into strips
- 3 habenero peppers, cut in half
- 3 cloves of garlic, cut in half
- Juice of one lime
- 2 tablespoons white vinegar
- Salt to taste
Directions
- Warm the oil in a skillet over medium heat. Add the carrots and let them cook for about 5 minutes.
- Put the onion, tomatoes, habaneros, and garlic cloves into the skillet next, and continue cooking, giving everything a stir now and then.
- Move the contents of the skillet to a blender. Add the lime juice and vinegar, then pulse; if the mixture is too thick, thin it with water, a tablespoon at a time.
- Season with salt and pepper to taste. This salsa is very fiery, so be careful, and if you have latex gloves, use them when you cut the peppers.
