Red Velvet White Chocolate Chip Cookies

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 1/2 Tbsp cocoa powder
  • 1 tsp cornstarch
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 tsp distilled white vinegar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1 1/2 tsp red food coloring
  • 3/4 cup white chocolate chips, divided

Directions

  1. Heat the oven to 375 degrees. In a mixing bowl, whisk the flour, cocoa powder, cornstarch, baking powder, and salt until evenly combined, then set the bowl aside.
  2. Using a stand mixer with the paddle attached, beat the butter, sugar, and vinegar until the mixture looks light and airy, about 3 – 4 minutes. Mix in the egg, then add the vanilla and red food coloring and beat until the color is blended through.
  3. Turn the mixer to low and gradually add the dry ingredients, mixing only until the dough comes together. Stir in the white chocolate chips; for more chips showing on top, mix in half now and save the remaining half to press into the shaped dough before baking, or reserve some chips and press them into the cookies just after they come out of the oven.
  4. Scoop the dough in heaping tablespoonfuls and roll each scoop into a ball. Place them on baking sheets lined with Silpat or parchment paper, then bake in the heated oven for 9 – 11 minutes.
  5. Cool the cookies on the baking sheet before moving them to a wire rack to finish cooling. Store the cookies in an airtight container.
