Roasted Brussels Sprouts with Chinese Sausage

- Heat the oven to 400F. Put the quartered Brussels sprouts on a baking sheet and coat them with the cooking oil. Clear a spot on the pan for the Chinese sausage so it can roast alongside the sprouts without being tossed together with them.
- Place the Chinese sausage on the baking sheet. Roast for 7-10 minutes, watching so the sausage does not burn. Take the pan out of the oven, transfer the Chinese sausage to a serving bowl, and set it aside.
- Stir the Brussels sprouts on the pan, then put them back in the oven for another 5-10 minutes, until they are tender and lightly browned. The exact timing will depend on the size of the Brussels sprouts, so check them with a fork for tenderness.
- Drizzle the fish sauce over the Brussels sprouts, add black pepper, and toss thoroughly. Transfer the Brussels sprouts to the serving bowl with the Chinese sausage and mix everything together.
