Satay Soba Noodle Bowl
Cool soba noodles and edamame are tossed in a creamy peanut-coconut sauce for a quick, savory bowl with lime, ginger and crunch.

Ingredients
- Salt
- Butter
- Sugar
- Water
- Brown sugar
- Soy sauce
- Milk
- Lime juice
- Sesame seeds
- Lime
- Peanut butter
- Coconut milk
- Cold water
- Juice
- Ginger
- Peanuts
Directions
- In a bowl, whisk the coconut milk, peanut butter, soy sauce, lime juice, water, brown sugar, Sriracha, and ginger until the sauce is completely smooth. Put it to the side.
- Prepare the noodles in salted water following the package instructions, and stir in the edamame for the final 2 minutes of the cooking time. Drain everything in a colander, rinse the noodles and edamame with cold water, then drain very well and transfer to a large bowl. Add the oil and toss so the noodles are coated, then pour in the peanut sauce and toss again. Spoon the mixture into 4 bowls. Add a drizzle of Sriracha, if you’d like, and finish with peanuts and, if desired, sesame seeds.
