Savory Roasted Sweet Potatoes with Parmesan, Garlic & Herbs

Ingredients

  • 2 1/2 lbs sweet potatoes, peeled if desired and diced into 1-inch cubes, about 3 medium
  • 3 Tbsp olive oil, plus more for serving
  • 3 – 4 cloves garlic, minced
  • 1 1/2 Tbsp chopped fresh thyme leaves
  • Salt and freshly ground black pepper
  • 1 1/2 Tbsp chopped fresh parsley leaves
  • 1/3 cup finely grated parmesan
  • Melted butter or more olive oil, optional

Directions

  1. Heat the oven to 400 degrees F. In a small bowl, combine the olive oil, garlic, and thyme. Pile the sweet potatoes onto a baking sheet, pour the oil mixture over them, add salt and pepper to taste, and toss until everything is well coated. Arrange the potatoes in a single, even layer.
  2. Roast until the sweet potatoes are tender, turning them once midway through, about 30 minutes total. For extra browning, you can move them close to the broiler for the final 1 – 2 minutes.
  3. Take the pan out of the oven, add a little more olive oil, and toss. Sprinkle the parmesan over the hot potatoes right away. If you want the parmesan completely melted, put the pan back under the broiler for about 1 minute. Finish with parsley and serve immediately.
