Seared Sea Scallops with Mango-Melon Salsa
Tender scallops get a quick Parmesan sear and a bright mango-melon salsa for a sweet-savory seafood dish with crisp edges and fresh contrast.

Ingredients

- Parmesan cheese
- Salsa
Directions
Prepare the salsa first, then leave it to sit while you work on the scallops so the flavors can come together. Lightly press the top and bottom of each scallop into the parmesan cheese, then tap away anything loose. Warm 2 tablespoons of olive oil in a large non-stick skillet set over medium-high heat. When the oil is hot, place the scallops in the pan, leaving space between them. Cook for 2 minutes per side, depending on their size, until the outside is golden brown. The centers should still look a little rare if you check them; they will continue to cook from the heat they hold after they come out of the skillet. Do not overcook them. Serve with the salsa.
