Ingredients
- 1 1/2 lbs small yukon gold potatoes, halved and diced into 1/2-inch thick pieces
- 1 small yellow onion or 1/2 large, peeled and diced into chunks
- 2 Tbsp olive oil
- 3/4 tsp dried thyme
- 1/2 tsp garlic powder
- Salt and freshly ground black pepper
- 12 oz. fully cooked smoked turkey sausage sliced into rounds about 1/4-inch thick
- 2 bell peppers, cored and diced into 1-inch pieces
- 3 Tbsp minced fresh parsley
Directions
- Heat the oven to 425 degrees. Coat a rimmed baking sheet sized 18 by 13-inch with non-stick cooking spray.
- Add the potatoes and onions to a large bowl, keeping the onion pieces as chunky as you can. Toss them with the olive oil, thyme, garlic powder, a light hand of salt since the sausage brings plenty, and pepper. Transfer everything to the prepared pan and arrange it in a single, even layer.
- Roast for 20 minutes in the hot oven.
- Take the pan out of the oven. You should see a bit of extra oil on the pan at this stage; if it looks dry, drizzle on another 1 Tbsp. Add the sliced sausage and bell peppers, then toss everything together on the pan.
- Slide the pan back into the oven and roast until the peppers are tender and the sausage is warmed through, about 15 minutes. Finish with parsley and serve warm.
