Ingredients
- 2 tablespoons butter
- 1 onion, thinly sliced
- 1 pound shiitake mushrooms, stemmed and thinly sliced
- 6 cloves garlic, chopped
- 2 bunches Lacinato kale, stemmed and chopped into bite-sized pieces
- 1 1/2 pounds shrimp, peeled and cleaned
- 2 tablespoons soy sauce
- 1/2 cup dry white wine
- 1/4 cup heavy cream, optional
Directions
- Warm the butter in a wide frying pan over medium-high heat until melted. Stir in the onion and shiitakes, then cook, stirring now and then, until the onion has softened, about 5 minutes.
- Add the garlic and stir it through the vegetables for 1 minute. Add the kale a handful at a time, stirring occasionally, and cook until it has wilted and is nearly tender, about 3 minutes.
- Move the vegetables out toward the edges of the pan so the shrimp have space in the center. Add the shrimp and cook, stirring occasionally, until they are just shy of opaque, about 3 minutes.
- Pour in the soy sauce, wine, and the cream if you are using it. Cook until the sauce tightens up a little, 2 to 3 minutes. Serve right away.
