Skillet Cheeseburger Pasta

Ingredients

  • 1 yellow onion
  • 1 Tbsp olive oil
  • 1/2 lb. lean ground beef
  • 2 Tbsp all-purpose flour
  • 8 oz. can tomato sauce
  • 2 cups beef broth
  • 1/2 lb. pasta shells, uncooked
  • 4 oz. shredded sharp cheddar
  • 2 Tbsp hot dog relish
  • 2 green onions, sliced, optional

Directions

  1. Chop the onion finely. Pour the olive oil into a large, deep skillet, then add the onion and ground beef. Cook over medium heat, breaking up the meat as you go, until no pink remains in the beef and the onion has turned soft and translucent. If there is extra grease in the pan, pour it off.
  2. Sprinkle in the flour, then keep stirring and cooking for 1 minute. It will turn into a thick paste and may cling to the skillet, so keep an eye on it and do not let it burn.
  3. Pour in the tomato sauce and broth, and add the pasta. Stir everything together, scraping the pan so any flour stuck underneath loosens into the liquid.
  4. Cover the skillet, raise the heat to medium-high, and bring the liquid to a boil. When it is bubbling, stir once, cover again, and lower the heat to medium-low. Simmer the pasta for 10-12 minutes, stirring now and then, until the pasta is tender and the sauce is thicker. Shut off the heat.
  5. Add the cheddar in small handfuls, stirring after each addition until it disappears into the sauce. Mix in the hot dog relish, scatter sliced green onions over the top, and serve hot.
