Ingredients
- For the sauce:
- 1 medium garlic clove
- 1/2 teaspoon salt
- 1 cup coarsely chopped cilantro
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1/8 teaspoon cayenne
- For the steak:
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 2 pounds skirt steak, cut to manageable grilling sizes
Directions
- Stir the steak spices together in a small bowl. Blot the steak until the outside feels slightly sticky, then work the spice blend over both sides.
- Set your grill pan over high heat so it can get nice and hot. While it warms, finely chop the garlic, then crush it with the salt into a paste; the broad side of a chef's knife is perfect for this. Scrape the paste into a blender or mini food processor, add the remaining sauce ingredients, and blend until the sauce is smooth.
- Lightly oil the grill pan, then cook the steak for about 5 minutes on each side for a typical medium-rare cut. After the steak has cooked and had a chance to rest, cut it into thin slices and spoon the sauce over the top.
