Ingredients
- 2 cloves garlic, minced
- 2 inches fresh ginger, grated
- 2 Tbsp vegetable oil
- 1/2 tsp toasted sesame oil
- 2 Tbsp soy sauce
- 2 Tbsp brown sugar
- 2 Tbsp 5 spice powder
- 4 lbs bone-in skin-on chicken pieces
- 1 medium onion
- 2 Tbsp rice wine
Directions
- In a small bowl, mix together the garlic, ginger, vegetable oil, sesame oil, soy sauce, brown sugar, and 5 spice powder until you have a paste-like rub. Use a small-holed cheese grater for the ginger, or chop it finely with a knife. Coat the chicken pieces thoroughly with the mixture, working it under the skin where you can.
- Chop the onion into a dice and scatter it across the bottom of the slow cooker. Add the rice wine over the onion, then arrange the chicken pieces on top, fitting them snugly together in the cooker. Put the lid on and cook on high for 4 hours.
- After 4 hours, the chicken should be extremely tender. With tongs, lift the pieces gently out of the cooking liquid and set them on a baking sheet. Move your oven rack so the top of the chicken sits 5 inches below the broiler, which is usually at the top of the oven. Broil on high for 5 minutes, or until the skin turns browned and crisp. Stay nearby while it broils, since broilers vary and the chicken can scorch quickly.
