Slow Cooker Sesame Beef

Ingredients

  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 2 cloves garlic
  • 1/2 Tbsp grated fresh ginger
  • 1 tsp toasted sesame oil
  • 2 lbs beef roast
  • 6 green onions, divided
  • 1 Tbsp cornstarch
  • 1 Tbsp sesame seeds

Directions

  1. In a bowl, stir together the brown sugar, soy sauce, and 1/2 cup water until the sugar dissolves. Finely mince the garlic, then grate the ginger. Add the garlic, ginger, and toasted sesame oil to the bowl, and keep this cooking liquid nearby.
  2. Cut the beef roast into slices or cubes, whichever you prefer. Cut 3 of the green onions into 1.5-2 inch lengths, holding back the remaining green onions for the garnish later. Add the beef roast and cut green onions to the slow cooker, pour the cooking liquid over them, and stir everything together.
  3. Cover the slow cooker with its lid and cook on HIGH for 4 hours or LOW for 8 hours. After 4 hours on HIGH or 8 hours on LOW, the beef should be soft enough to pull apart easily with a fork. If it is still putting up a fight, put the lid back on and cook for 30-60 minutes longer.
  4. When the beef is tender, thicken the sauce. Stir the cornstarch into 2 tablespoons of water until smooth, then add it to the slow cooker with the beef and liquid. Stir it in, let the mixture return to a simmer, and the sauce will tighten up just a bit. Turn off the heat, then finish with the sesame seeds and the remaining green onions, sliced. Serve it over a bed of rice or alongside whatever meal you like.
