Ingredients
- 2 tsp. + 1 tsp. olive oil
- 19.5 oz. hot turkey Italian Sausage
- 1 green bell pepper, finely chopped
- 1 medium onion, finely chopped
- 2 cups chicken stock
- 1 cup Uncle Ben's Brown Rice
- 1 tsp. Spike Seasoning
- 1/2 tsp. salt
- 1/4 – 1/2 teaspoon Cayenne Pepper
- Sliced green onions or chopped fresh parsley for garnish, optional
Directions
- Warm 2 teaspoons of olive oil in a skillet. Press the sausage meat out of the casings into the pan, then cook it until nicely browned, using a spatula to crumble it and move it around so it browns evenly. Transfer the sausage to the slow cooker.
- As the sausage cooks, finely dice the green bell pepper and onion.
- Once the sausage is out of the pan, pour in the last teaspoon of olive oil. Cook the pepper and onion for 2-3 minutes, stirring as they soften, then scrape them into the slow cooker.
- Add the chicken stock, rice, Spike Seasoning, salt, and Cayenne pepper to the slow cooker, and stir everything together. Set the slow cooker to high and cook for 2 hours, or until the rice is tender.
- Serve warm, adding sliced green onions or chopped fresh parsley on top if you’d like.
- This freezes well, so if your slow cooker is large, doubling the recipe is a good option.
