Ingredients
- 1 yellow onion
- 2 cloves garlic
- 1 can petite diced tomatoes, with juices
- 1 can tomato paste
- 1 can black beans, drained
- 1 can kidney beans, drained
- 1 cup brown lentils, uncooked
- 1 Tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- Freshly cracked pepper
- 2 Tbsp coconut oil
- 4 cups vegetable broth
Directions
- Chop the onion into small pieces and finely mince the garlic. Put both into the slow cooker, then add all of the remaining ingredients. Stir everything together until well mixed.
- Cover the slow cooker and cook on high for 4 hours, or on low for 8 hours. When it is done, the lentils should be soft.
- Taste the chili before serving and add more salt if it needs it, since broths vary quite a bit. Spoon it up hot and finish with the toppings you like.
