Smoked Paprika Roast Chicken
A paprika-butter roasted chicken finished with honey and lemon for crisp skin, savory depth and a bright touch of sweetness.

Ingredients
- 2 Tbsp smoked paprika
- 2 Tbsp melted unsalted butter*
- 1 teaspoon garlic powder
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 whole 4-5 pound roasting chicken
- 4 Tbsp honey
- 2 Tbsp lemon juice
Directions
- Set the oven to 325 degrees F. Rinse the chicken under cold water, then dry it very well with paper towels so the seasoning mixture can hold onto the skin.
- Stir the paprika, melted butter, garlic powder, salt and pepper together until you have a smooth paste. Rub it all over the chicken, covering the whole surface, then transfer the chicken to a shallow baking pan.
- Warm the honey and lemon juice together in a small pot, then take it off the heat and keep it nearby.
- Roast the chicken at 325 degrees F for approximately 1 hour to an hour and 15 minutes. Brush it with the lemon-honey mixture after 35 minutes, then continue basting every 15 minutes after that. Depending on the size of your chicken, the total roasting time may need a little adjusting.
- The chicken is ready when a knife tip inserted into both the breast and thigh releases clear juices, not pink ones, about 165 degrees F.
- Season with more salt and pepper to taste.
