Ingredients
- 1 Tbsp olive oil
- 1/2 lb. smoked sausage
- 2 bell peppers
- 1 yellow onion
- 15 oz. can diced tomatoes
- 1/2 tsp dried oregano
- Freshly cracked pepper
- 2 cups cooked farro
- 1/4 bunch fresh parsley, chopped, optional
Directions
- Cut the onions and bell peppers into thin slices. Slice the smoked sausage crosswise into medallions about 1/4 inch thick.
- Warm the olive oil in a large skillet set over medium heat. Add the sausage slices and cook, stirring as needed, until they’re browned. Pour off any extra fat.
- Add the onions and bell peppers to the same skillet. Keep cooking until the onions have softened and turned translucent.
- Stir in the diced tomatoes with their juices, the oregano, a few grinds of freshly cracked pepper, and the cooked farro. Mix everything well, then let it cook until warmed all the way through, 5-7 minutes. Taste and add salt if it needs it. Finish with chopped parsley on top.
