Ingredients
- 1 cup cider vinegar
- 1/4 cup light brown sugar, packed
- 2 tablespoons red pepper flakes
- 2 tablespoons hot sauce, such as Frank's
- 2 teaspoons kosher salt
- 1 pound smoked turkey, pulled or chopped
- 8 steamed or toasted potato rolls, such as Martin's
- Creamy cole slaw
Directions
- In a mixing bowl, combine the sugar and salt with the cider vinegar, red pepper flakes, and hot sauce, then whisk until both have dissolved. Let the mixture sit for at least 20 minutes.
- Warm the turkey in the microwave, or place it in a foil-covered skillet and heat it in the oven or toaster oven until it is hot all the way through. Move the turkey to a bowl. Add the sauce in small pours of a few tablespoons; after each addition, toss the meat with your hands and taste, stopping when the balance of tang and heat is right for you.
- Open the potato rolls, tuck in a small handful of turkey, and top with a small handful of cole slaw. Serve immediately.
