Ingredients
- 2 Tbsp olive oil
- 1 small yellow onion
- 2 cloves garlic
- 2 Tbsp tomato paste
- 1/2 Tbsp smoked paprika
- 1/2 tsp cumin
- 2 -15 oz cans fire roasted diced tomatoes
- 1 cup vegetable broth
- 1/2 tsp brown sugar
- Freshly cracked pepper to taste
Directions
- Chop the onion into small pieces and mince the garlic. Set a soup pot over medium heat, add the olive oil, then stir in the onion and garlic. Cook until the onion softens and turns almost clear.
- Spoon in the tomato paste, then add the smoked paprika and cumin. Keep stirring as the mixture cooks for about 2 minutes, letting the paste darken slightly and the spices warm up.
- Pour in the fire-roasted tomatoes from the cans, then add the vegetable broth, brown sugar, and a little pepper cracked over the pot. Stir everything together and let the soup get hot, about 10 minutes. Taste it, then adjust the seasoning if it needs it; depending on your broth, you may want to add salt.
