S’mores Bars

Ingredients

  • 1 1/4 cups all-purpose flour
  • 3/4 cup fine graham cracker crumbs
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light-brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 XL Hershey milk chocolate bars
  • 1 jar marshmallow creme

Directions

  1. Heat the oven to 350 degrees. Butter an 8 by 8-inch baking dish, then fit it with 2 sheets of parchment paper so a little extends past the edges on each side; butter the parchment too. If lifting the bars out whole is not important to you, you can skip the parchment and simply butter the pan.
  2. In a mixing bowl, whisk the flour, graham cracker crumbs, baking soda and salt for 20 seconds, then put the bowl aside.
  3. In the bowl of a stand mixer with the paddle attachment, beat the butter, brown sugar and granulated sugar together until the mixture looks creamy. Add the egg and vanilla extract and mix them in. Turn the mixer to low, gradually add the dry mixture, and keep mixing just until the dough comes together.
  4. Split the dough into 2 portions. Press 1 portion evenly across the bottom of the prepared dish. Arrange the chocolate bars next to each other on top of the dough, then spread the marshmallow creme over the chocolate in an even layer.
  5. Break off pieces of the remaining dough about the size of golf balls, press them into small flat shingles, and place them next to each other over the marshmallow creme. Do your best to cover the creme so it is not peeking through.
  6. Bake for 27 – 30 minutes, until the top has turned lightly golden brown. Set the pan on a wire rack and let the bars cool completely before slicing into squares. Use the parchment edges to lift the slab from the pan before cutting; it is best to cut close to serving time because the filling can start to run a bit. Store in an airtight container.
