Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup graham flour, poured and leveled
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 3/4 cup unsalted butter, softened
- 1 cup packed light-brown sugar
- 1/4 cup granulated sugar
- 3 Tbsp honey
- 1 large egg
- 1 large egg yolk
- 1 tsp vanilla extract
- 1 recipe Marshmallow Frosting, found here
- 1 1/2 cups semi-sweet chocolate chips
- 2 tsp shortening
Directions
- Heat the oven to 350 degrees. In a mixing bowl, whisk the two flours with the baking soda, salt, and cinnamon for 30 seconds, then set the bowl aside.
- Set an electric stand mixer up with the paddle attachment. In its bowl, beat the butter, brown sugar, and granulated sugar on medium-high speed until the mixture looks pale and fluffy. Mix in the honey. Add the egg and beat until combined, then mix in the egg yolk and vanilla.
- Turn the mixer to low speed and gradually add the dry ingredients, mixing only until the dough comes together. Portion the dough in 1 1/2 Tbsp scoops (25 – 27 grams each), then roll each portion into a ball.
- Arrange the dough balls on baking sheets lined with Silpat or parchment paper, leaving 2 inches between them. Bake for 9 – 10 minutes. Take the sheets from the oven and let the cookies rest there for several minutes, then move them to a wire rack until fully cooled.
- When the cookies are cool, combine the chocolate chips and shortening in a microwave safe bowl. Microwave on 50% power in 30 second intervals, stirring each time, until the chocolate is melted and smooth.
- Spoon melted chocolate onto the flat side of one cookie and spread it over the surface. Let it cool slightly, just enough that it will not melt the frosting. Pipe marshmallow frosting onto the flat side of another cookie. If desired, toast the marshmallow frosting with a kitchen torch, then press the two cookies together into a sandwich.
- Store the finished cookie sandwiches in an airtight container in a single layer.
- For the graham flour, either fill the measuring cup straight from the bag and level it off, or use the spoon-and-level method. Many grocery stores shelve graham flour with health-food ingredients; Bob's Red Mill is one option, and it is also available online. Substituting is not ideal because the graham flavor will not be the same, but wheat flour is the closest choice if you truly cannot find it.
