S’mores Cookies

Ingredients

  • 10 graham cracker sheets, finely ground in a food processor
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 2/3 cup packed light-brown sugar
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 5 cups miniature marshmallows
  • 3/4 cup milk chocolate chips
  • 3 Tbsp butter
  • 1 Tbsp water

Directions

  1. Preheat the oven to 350 degrees. In a mixing bowl, stir together the flour, ground graham crackers, baking powder, baking soda and salt, then set the bowl aside.
  2. With an electric mixer, beat the butter, brown sugar and granulated sugar until the mixture turns lighter and fluffy, about 3-4 minutes. Mix in the egg and vanilla. Add the dry mixture gradually, mixing until everything is well combined.
  3. For each cookie, measure 1 Tbsp of dough and roll it into a ball, then set the dough balls on a greased baking sheet; 11 per sheet works. Press them down lightly and bake for 9 minutes. Take the cookies out of the oven and let them cool.
  4. While the cookies cool, generously butter a cookie sheet. Spread the miniature marshmallows across it in a single layer. Set the oven to broil and broil the marshmallows until golden, about 30 seconds – 1 minute, and stay right there because they move fast. Remove the tray from the oven and use a buttered spatula to scoop the marshmallows onto the tops of the cookies.
  5. Use a small microwave-safe mixing bowl for the chocolate chips, butter and water. Microwave at 50% power in 30-second intervals, stirring after each round, until the chocolate is melted and smooth. Transfer the mixture to a small resealable plastic bag or piping bag. Snip a small corner and drizzle the chocolate over the S'mores Cookies. Keep the cookies in an airtight container.
