Snickers Chocolate Chip Cookies

Ingredients

  • 2 3/4 cup all-purpose flour
  • 1 Tbsp cornstarch
  • 1 tsp baking soda
  • 1/4 tsp + 1/8 tsp salt
  • 1 cup salted butter, at room temperature
  • 1 1/4 cups light-brown sugar
  • 1/4 granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 6 – 8 oz Snickers candy bars, chopped, about 1 1/2 – 2 cups
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped, unsalted or lightly salted peanuts, optional

Directions

  1. Heat the oven to 350 degrees.
  2. Whisk the dry ingredients in a mixing bowl for 30 seconds: flour, cornstarch, baking soda, and salt. Set that bowl aside.
  3. In an electric stand mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar until the mixture is pale and fluffy.
  4. Add the eggs 1 at a time, mixing after each one until it is incorporated. Mix in the vanilla.
  5. Turn the mixer to low, gradually add the dry mixture, and stop as soon as the dough comes together.
  6. Add the chopped Snickers, chocolate chips, and peanuts, and mix on low only until they are distributed through the dough.
  7. Scoop the dough into balls, using about 3 Tbsp for each one (45 g), and arrange them on a baking sheet lined with a Silpat or parchment paper. Leave at least 2 inches between the dough balls.
  8. Bake for 10 – 12 minutes, until the edges are lightly golden.
  9. Take the cookies out of the oven and leave them on the baking sheet for several minutes, then transfer them to a wire rack to finish cooling.
  10. Store the cookies in an airtight container.
  11. For the salted butter, check the nutrition facts and look for 100 mg of sodium per serving or less. If your butter is higher than 100 mg, reduce the salt slightly.
  12. If using Snickers bites, cut each piece into quarters. Minis work too if bites are not available.
