Ingredients
- 2 tablespoons extra virgin olive oil
- 1/2 pound snow peas, rinsed, dried, tips of the ends cut off, strings removed
- 1/4 cup pine nuts
- 1 clove garlic, minced
- 1/4 teaspoon dark sesame oil
- 10 large mint leaves, chopped
Directions
- Warm the olive oil in a large skillet over medium high heat. Tip in the snow peas, garlic, and pine nuts, then toss everything around so the oil lightly slicks the ingredients. Cook for 1-2 minutes, moving the mixture often.
- Stop before the snow peas soften too much; you want them to keep a bit of crunch. Take the skillet off the heat, fold in the sesame oil and chopped mint leaves, and serve right away.
