Ingredients
- 1 cup milk
- 1/2 stick unsalted butter
- 1/4 cup honey
- 1 package pizza yeast
- 13 1/2 ounces bread flour
- 1 teaspoon salt
Directions
- Warm the milk in a small saucepan until it reaches a boil, then transfer it to the bowl of a stand mixer. Add the butter and honey, stirring now and then so the butter melts into the hot milk. Once the mixture is lukewarm, stir in the yeast and about 1/3 of the flour. Leave it for a few minutes, just until you see bubbles.
- Add the remaining flour and the salt. Using the dough hook, knead until the dough becomes smooth and elastic.
- Heat the oven to 350 degrees, and dust a baking sheet with cornmeal. A quarter-sheet pan will keep the buns close enough to touch as they bake, which gives them softer sides; choose a larger pan and space them farther apart if you prefer separate buns.
- Move the dough to your work surface and cut it into 15 pieces. Shape each piece into a ball, then arrange them on the prepared baking sheet with the seam side underneath. Cover with plastic wrap and leave them to rise until doubled, about an hour.
- Once the buns have puffed, bake at 350 degrees until they turn golden, about 25 minutes.
- If you do not have pizza yeast, instant or active dry yeast can be substituted. With either of those, allow the dough to rise in the bowl first, punch it down, shape the rolls, and let them rise again before baking.
