Spice-Rubbed T-Bone Steaks
Smoky T-bone steaks get a bold spice coating, then grill to a juicy medium-rare finish.

Ingredients
- 2 T-bone steaks, about 1 inch thick
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon freshly ground black pepper
- Kosher salt, to taste
Directions
Build a charcoal or gas grill fire and bring it to medium-high, 450°F to 500°F. In a small bowl, combine the chile powder, cumin, paprika, garlic powder, 1 Tbs. salt, and 1 tsp. pepper. Rub the seasoning blend over the steaks, covering each side. Cook on the grill for 8 minutes per side for medium rare. Place the steaks on a work surface afterward and allow them to rest for 5 minutes before serving. Offer the steaks with the aïoli, vegetables, and bread.
