Spiced Biscoff Sandwich Cookies

Ingredients

  • 1 3/4 cup all purpose flour
  • 3/4 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoon cloves
  • 1 1/2 teaspoons ginger
  • 1/2 teaspoon grated nutmeg
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, at room temperature
  • 1/3 cup dark brown sugar
  • 1/2 cup molasses
  • 2 tablespoons orange juice
  • 1 tablespoon orange zest
  • Biscoff spread

Directions

  1. Combine the flour with the baking soda in a medium bowl, then whisk in the cloves, ginger, grated nutmeg, and salt. In a large bowl, beat the butter and sugar until the mixture looks pale and airy. Add the molasses, orange juice, and zest, then beat until everything is blended. Mix in the dry ingredients until the dough pulls together. Split the dough into 2 portions, wrap each one in plastic wrap, and refrigerate for 3 hours.
  2. Heat the oven to 325 degrees F. Set parchment on a baking sheet.
  3. Take the dough from the refrigerator and roll it out on a lightly floured surface to 1/8 inch thick. For crisp cookies, you want the dough as thin as you can reasonably get it. Cut out the cookies and arrange them on the baking sheet. Bake for about 7 minutes, until the cookies look dry and the color has deepened.
  4. Leave the cookies on the baking sheet for 5 minutes, then move them to a wire rack to cool completely. Spread about 1/2 teaspoon Biscoff spread over 1/2 of the cookies. Place the remaining cookies on top to make sandwiches.
