Spicy Chicken Drumsticks
Chicken drumsticks get a punchy scallion-chile spice paste, then broil until browned, juicy, and boldly seasoned.
Prep 15 min · Cook 20 min · Total 45 min · Makes 10 drumsticks

Ingredients
- 10 green onions, white and green parts, chopped
- 1/2 habanero or Scotch Bonnet chile, seeded and chopped
- 2 tablespoons white wine vinegar
- 1 tablespoon fresh thyme
- 3 cloves garlic, chopped
- 1 1/4 teaspoon ground allspice
- 1 teaspoon kosher salt, plus more for additional seasoning
- 1/2 teaspoon freshly ground pepper
- 10 chicken dumsticks
- Extra virgin olive oil
Directions
- Make the chile paste by adding the green onions, chilies, vinegar, garlic, thyme, allspice, salt and pepper to a food processor and blending until you have a thick, smoothish paste.
- Place the drumsticks in a large bowl, add the chile paste, and turn the chicken until every piece is well coated. Set it aside for 10 minutes.
- Move the oven rack to the middle position and turn the broiler to high.
- Brush oil over the lower section of a broiler pan, beneath the slotted top. A broiler pan is the better tool here, since a standard baking pan can bend under the broiler’s intense heat.
- Set the drumsticks on the pan and season them generously with salt.
- Broil the chicken, flipping the pieces once after about 10 minutes. Keep broiling until the drumsticks are browned and cooked through, with clear juices when pierced with the tip of a knife, about 20 minutes total.
- If a few drumsticks finish ahead of the others, take those off the pan and let the remaining pieces continue cooking until they are done.
