Ingredients
- 1 1/2 pounds ground turkey
- 1/2 cup fresh bread crumbs
- 3 Tbsp mayonnaise
- 2 Tbsp chopped fresh chives
- 1 Tbsp Worcestershire sauce
- 1 1/2 to 3 teaspoons of hot chile sauce such as Tabasco sauce, or Tabasco Chipotle sauce
- 2 green onions, minced, white and green parts
- 4 fresh basil leaves, thinly sliced
- 1 teaspoon sea salt, or more to taste
- 1/2 teaspoon freshly ground pepper, or more to taste
- 4 hamburger buns, lightly toasted
- Sweet pickle slices
- 1 tomato, cored and sliced
- 2 cups shredded cabbage
- 1 cup loosely packed arugula, watercress, or just another cup of shredded cabbage
- 10 basil leaves, thinly sliced
- 1/2 cup of mayonnaise
- 1 Tbsp apple cider vinegar
- 1 teaspoon sugar
- 2 teaspoons Dijon mustard
- 1/2 teaspoon crushed red pepper flakes
- Salt and freshly ground pepper to taste
Directions
- Set up your gas or charcoal grill for direct heat on high. If you’re cooking indoors, use a stovetop griddle or a cast iron frying pan instead. In a large bowl, add the mayonnaise, Worcestershire sauce, chili sauce, chives, basil, green onions, salt, pepper, breadcrumbs, and turkey, then use your hands to combine everything gently. Stop as soon as the mixture comes together, because overworking it is the fast track to tough burgers. Shape the mixture into 4 patties, each about 1-inch thick.
- Season the patties with salt and pepper, then grill them for 5-7 minutes per side, until a meat thermometer inserted into the burgers reads 165 degrees F. Turkey burgers need to be cooked all the way through, not treated like rare beef.
- When the burgers are nearly finished, set the buns on the grill and toast them for about 1 minute. Transfer the burgers from the grill onto a platter, cover them, and let them rest for 5 minutes.
- For the coleslaw, whisk together the vinegar, mayonnaise, mustard, sugar, and red pepper flakes in a small bowl. Just before serving, add the dressing to a larger bowl with the cabbage, basil, and arugula.
- Build each burger by setting a patty on the bottom bun, then adding a tomato slice, pickles, and a little coleslaw. Finish with the top bun.
