Spinach and Basil Pesto
This quick spinach-basil pesto blends greens, garlic, pine nuts and Parmesan into a bright, savory sauce with a smooth texture.
Prep 15 min · Makes about 3 cups

Ingredients
- 2 cups fresh spinach leaves
- 2 cups fresh basil leaves
- 2 T garlic puree or finely minced fresh garlic
- 2/3 cup pine nuts
- 1 1/3 cup good quality grated Parmesan cheese
- 2/3 cup extra virgin olive oil
Directions
- You’ll need a food processor for this one; a Cuisinart Food Processor DLC 10 works, and so will another sturdy model fitted with a steel blade. Wash the spinach and basil, then dry them very thoroughly.
- Add the spinach and basil to the processor. Pulse again and again until the leaves are finely chopped, stopping to stir the mixture a few times if it needs help moving around.
- Add the garlic, pine nuts, and Parmesan. Process for 2-3 minutes, until the pine nuts are chopped small and everything looks evenly mixed.
- Put the lid on and, while the processor runs, pour the olive oil through the feed tube in a steady drizzle. Stop when the pesto reaches the texture you like; use less oil if you want it on the thicker side.
