Ingredients
- 1/2 Tbsp olive oil
- 1 clove garlic
- 1/4 lb frozen cut spinach
- Pinch of salt and pepper
- 2 ciabatta rolls
- 1 cup shredded mozzarella cheese
- 1 oz feta cheese
- Pinch red pepper flakes, optional
Directions
- Finely chop the garlic, then put it in a skillet with the olive oil. Set the pan over medium-low heat and cook the garlic for 1-2 minutes, just until it starts to soften. Stir in the frozen spinach, raise the heat to medium, and cook for about 5 minutes, until it is hot and most of the extra moisture has cooked off. Add a light sprinkle of salt and pepper.
- Split the rolls in half. On the bottom half of each roll, layer about 1/4 cup of shredded mozzarella and 1/2 oz. of feta. Spoon the cooked spinach evenly onto the 2 sandwiches, then add a pinch of red pepper flakes and another 1/4 shredded mozzarella to each one.
- Close the sandwiches with the top halves of the ciabatta rolls and move them to a large non-stick skillet. Pour a few inches of water into a large pot so it can act as a weight, then set the pot over the sandwiches to press them like a panini press. Set the heat to medium-low and cook until the bottoms are crisp. Flip the sandwiches carefully, set the weighted pot back on top, and keep cooking until the second side is crisp and the cheese has melted. Serve warm.
