Sriracha and Spam Fried Rice

Ingredients

  • 1/4 cup Sriracha, plus more for garnish
  • 3 tablespoons soy sauce
  • 3 tablespoons toasted sesame oil or peanut oil
  • 1 container SPAM, diced
  • 1/2 cup frozen corn kernels
  • 4 cups cooked white rice, cooled, preferably day-old
  • 2 eggs
  • 1 clove garlic, minced
  • Sliced green onions, green part only, for garnish

Directions

  1. Whisk the Sriracha and soy sauce together in a small bowl, then set it aside. Put a large nonstick skillet, cast-iron skillet, or wok over very high heat and let it get seriously hot. Pour in 1 tablespoon of the oil, and give it 10 to 15 seconds to heat, until the surface starts to shimmer. Add the SPAM and corn, and cook them until the meat starts picking up browned edges, 3 to 5 minutes.
  2. Add another tablespoon of oil to the pan and let it warm for 10 seconds. Tip in the rice, stirring so the oil gets worked through the grains. Keep everything moving and stir-fry for 3 minutes.
  3. Push the rice mixture out toward the sides of the pan so you have an open space in the middle. Add the remaining tablespoon of oil to that center spot, and let it heat until it shimmers, 10 to 15 seconds. Add the eggs and garlic, stirring quickly. Once the eggs are fully cooked, pour the Sriracha-soy mixture over the rice. Toss it all together and let it cook for about 30 seconds more.
  4. Spoon the rice into bowls, finish with Sriracha and green onions, and serve right away.
