Ingredients
- 1 tablespoon vegetable oil
- 2 medium cloves garlic, minced
- 1 pound luffa gourds, peeled and roll-cut into 1-inch pieces
- 2 large eggs, lightly beaten
- Fish sauce, to taste
- White pepper, to taste
Directions
Warm the oil in a 12-inch non-stick skillet over medium-high heat until it glints. Add the garlic and stir-fry until the garlic is fragrant and just light brown, about 30 seconds. Tip in the gourds along with 2 teaspoons fish sauce. Stir them around and cook until they start to soften, about 1 minute. Pour in the eggs. Keep stirring as they cook, stopping when they are barely set, about 1 minute longer. Taste and add more fish sauce if you like. Slide everything onto a plate, finish with white pepper, and serve with rice.
