Ingredients
- 3 Tbsp soy sauce
- 1 Tbsp water
- 1 Tbsp brown sugar
- 1-2 Tbsp chili garlic sauce, sambal, or sriracha
- 1 tsp sesame oil
- 8 oz. rice noodles
- 2 cloves garlic
- 1 Tbsp grated ginger
- 1 Tbsp vegetable oil
- 1/2 lb. lean ground beef
- 1 carrot
- 3-4 green onions
- Handful fresh cilantro, optional
Directions
- Cook the noodles as the package instructs, stopping while they still have a firm bite so they do not get too soft. Drain them in a colander and set them aside.
- In a small bowl, stir together the soy sauce, water, and brown sugar. Add the chili garlic sauce and sesame oil, then mix again and set the sauce aside.
- Finely chop the garlic and grate the ginger. Shred the carrot on the large holes of a cheese grater, or julienne it with a mandoline. Cut the green onions on an angle, keeping the white bottoms separate from the green tops.
- Warm the vegetable oil in a large skillet over medium heat. When it is hot, add the ground beef, garlic, and ginger. Cook, stirring, until the beef is cooked through. Stir in the white pieces of green onion and cook for 1 more minute. Add the shredded carrot and cook for another 1 minute, leaving it with a little crunch.
- Add the drained noodles to the skillet, then pour in the prepared sauce. Stir until everything is coated and the noodles have taken up any extra liquid. Turn off the heat, then finish with the green onion tops and fresh cilantro leaves.
