Strawberry Buttercream Frosting

Ingredients

  • 3/4 cup unsalted butter, at room temperature
  • 1 cup freeze dried strawberries
  • 2 1/2 Tbsp heavy cream
  • 2 cups powdered sugar

Directions

  1. Add the butter to the bowl of an electric stand mixer fitted with the paddle attachment. Beat on medium-high speed until it looks very light and airy, 6 – 8 minutes, stopping often to scrape the bottom and sides of the bowl.
  2. While the butter is whipping, grind the freeze dried strawberries in a food processor until they become a fine powder. Before lifting the lid, wait about 10 second so the strawberry dust can settle a little. You should have 3 1/2 Tbsp of strawberry powder.
  3. Add the strawberry powder to the beaten butter and mix until it is incorporated. Mix in the heavy cream, then add the powdered sugar and continue beating on medium-high speed for 4 – 5 minute longer, until the frosting is very pale and fluffy, scraping the sides and bottom of the bowl frequently. For the best texture, frost and serve within an hour.
