Prep 15 min · Makes about 5 cups

Ingredients
- 8 rounded cups, or 2 pounds, of strawberries
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh mint
- 1 1/2 cups sugar
- Pectin, See below
Directions
- Mash 8 rounded cups, or 2 pounds, of strawberries until you have 4 cups of crushed fruit. Stir in 2 tablespoons lemon juice and 2 tablespoons chopped fresh mint.
- If you’re using Ball instant fruit pectin, mix 1 ½ cups sugar with a packet of Ball instant fruit pectin, then stir that into the fruit for 3 minutes. Spoon the jam into small jars or containers, and let it finish setting in the fridge overnight.
- If you’re using Pomona’s Universal, combine the crushed strawberries, sugar, lemon juice, and mint. In a blender, mix 3 teaspoons pectin powder with ¾ cup boiling water very thoroughly, until the pectin has dissolved and the mixture is smooth. Stir it into the fruit and sugar mixture right away. Add 2 teaspoons calcium water, and stir just until the jam starts to set.
