Ingredients
- 2 eggs
- 1 1/3 cup sugar-free sweetener of your choice
- 6 T grapeseed oil or canola oil
- 1 tsp. vanilla
- 1/4 cup buttermilk
- 1 1/2 cups grated zucchini
- 1 cup white whole wheat flour
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 cup unsweetened cocoa powder
- 1/4 tsp. salt
- 3/4 cup chopped walnuts, or pecans
Directions
- Preheat the oven to 350F/175C. Coat a loaf pan with nonstick spray.
- In a small bowl, whisk together the eggs, your chosen sweetener, brown sugar, oil, vanilla, and buttermilk. Add the grated zucchini and stir it through.
- In a somewhat larger bowl, combine the white whole wheat flour, baking soda, baking powder, unsweetened cocoa powder, and salt.
- Pour the wet mixture into the dry mixture, then stir only until everything comes together. Gently fold in the chopped walnuts or pecans.
- Transfer the batter to the prepared loaf pan, scraping the bowl well. Smooth the surface so the loaf bakes up evenly.
- Bake for 45-50 minutes, until a toothpick pushed into the middle comes out clean. Cool the bread in the pan before slicing and serving.
