Sugar-Free Gluten-Free Triple Almond Cookies

Ingredients

  • 2 eggs
  • 1 cup + 2 T Golden Monkfruit Sweetener
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1/4 tsp. kosher salt
  • 1/4 – 1/2 tsp. almond extract
  • 1 cup blanched almond flour
  • 1 cup almond butter
  • 3/4 cup chopped almonds, plus 20 whole almonds for the tops of the cookies

Directions

  1. Heat the oven to 350F/170C, and line a large baking sheet with parchment paper. A stand mixer works well here, though a hand mixer will do the job too. In the bowl, beat the eggs with the Golden Monkfruit Sweetener or your preferred sweetener, baking powder, vanilla, salt, and almond extract, if you are using it.
  2. Add the almond flour and mix until the dough looks evenly blended. Beat in the almond butter next; the dough will become quite firm.
  3. Chop enough whole almonds with skins to get 3/4 cup, then fold them gently into the dough. Scoop the dough in 1 tablespoon portions, shape each one into a ball, and arrange them on the parchment-lined baking sheet.
  4. Flatten each cookie, then press 1 whole almond into the middle. Bake for about 16 minutes, until the edges are just beginning to color and the cookies still feel a little soft. Cool them for at least 20 minutes, or longer, since they firm up as they sit.
