Ingredients
- 12 oz. Swiss chard leaves, chopped
- 1 T olive oil
- 1 large onion, chopped
- 6 oz. goat cheese
- 1/2 cup milk, half and half, or cream
- 8 eggs
- Salt and fresh ground black pepper to taste
- 1/4 cup grated mozzarella
- 2 T + 2 T grated Parmesan, preferably freshly grated
Directions
- Preheat the oven to 350F/180C. Strip the leaves from the Swiss chard stems and set the stems aside for another use. Stack the leaves, cut them into 1/2 inch ribbons, then rotate the cutting board and cut across them to chop the chard. You will probably need to work in a couple of batches. If the chard needs washing, rinse it in a salad spinner and spin it until very dry.
- Cut the onion into about 1/4 inch pieces.
- Warm the olive oil in a large frying pan that can fit all the Swiss chard. Add the onion and cook over medium-high heat for 4-5 minutes, until it is just beginning to take on a little color.
- Add all the Swiss chard to the pan. Turn it with a large spatula as it cooks, until the leaves have wilted, about 2-3 minutes. Take the pan off the heat and let the mixture cool a bit.
- Mix together the milk and goat cheese. A small blender bowl works well for this, or you can let the cheese soften and stir it by hand.
- In a large bowl, whisk the eggs until the yolks and whites are completely blended, then add salt and fresh ground black pepper to taste.
- Stir the goat cheese and milk mixture into the eggs, then mix in the mozzarella and 2 tablespoons of the Parmesan. Add the Swiss chard and onions, stirring until the greens are evenly spread through the egg mixture.
- Coat a round casserole dish with olive oil or nonstick spray, or use a Springform Pan if you have one. Choose a dish or pan that is 8 or 9 inches across.
- Pour the egg and chard mixture into the prepared pan, then sprinkle the remaining 2 tablespoons of Parmesan over the top.
- Bake for 1 hour, until the custard is completely set and the top is lightly browned.
- Serve hot for breakfast, brunch, lunch, or a light dinner.
- Store leftovers in the fridge for several days, and reheat for a minute or 2 in the microwave.
