Tater Tot Breakfast Casserole

Ingredients

  • 12 ounces ground pork breakfast sausage
  • 6 ounces shredded cheddar cheese, plus extra to sprinkle over top
  • 8 large eggs
  • 1/2 cup milk
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • One 32-ounce bag frozen tater tots
  • Thinly sliced chives, for serving

Directions

  1. Heat the oven to 350˚F. Set a 12-inch oven-safe skillet over medium heat, then add the sausage. Cook it for 5 to 7 minutes, using a wooden spoon to break it up as it browns, until it’s cooked through. Take the skillet off the heat.
  2. In a medium bowl, whisk the eggs, milk, salt and pepper until combined.
  3. Smooth the sausage across the bottom of the skillet in an even layer. Add the shredded cheese over the sausage, then pour the egg mixture over everything.
  4. Lay the frozen tater tots over the egg mixture in concentric circles, either starting at the edge of the skillet and moving inward or beginning in the center and working out. You won’t need the whole bag, so set the remaining tater tots aside for another use.
  5. Bake until the eggs are completely set and the cheese is melted, 35 to 40 minutes. If you’d like, add a little extra cheese on top and return it to the oven for another minute or 2, just until melted.
  6. Let the casserole cool a bit before slicing it into wedges. Finish with sliced chives and serve. Leftovers will keep for about 5 days.
